Paal Kozhukattai
One of my viewer requested this recipe so many months back . I was checking out my to do recipes and found this sitting in the top list. So decided to try it out. I love this a lot, one of my collegues will bring this to office often, her mom makes the most delicious melt in mouth paal kolukattai in the world. I asked her the recipe and have made this quite often, but forgot to take pictures of it.
As ganesh chaturthi is right around the corner, i thought this kolukattai recipe would be a great addition to the list. Although it is not traditionally made on that day, but i would love to add it to the list since this recipe is from the lord ganesh's beloved kolukattai family. I hope you will try it out and let me know how it turned out for you.
About Paal Kozhukattai Recipe
Paal Kolukattai is Rice flour balls cooked in a coconut milk sauce and sweetened with sugar or jaggery. Ragi paal kozhukattai is an alternate recipe for traditional rice flour kozhukattai. I have shared recipe for traditional paal kozhukattai, kozhukattai sweetened with jaggery and ragi (finger millet) paal kozhukattai as well. This recipe is traditionally made on tamil new year, ganesh chaturthi. But it makes a great dessert for parties too.
Traditionally paal kozhukattai is made into a thick batter and added to idiyappam press with large holes and pressed directly in boiling milk. But this is easier version.
You can make paal kozhukattai various number of ways. I have made using wheat flour and millet flour too.

Paal Kozhukattai Ingredients
Rice flour
Rice flour is important ingredients in paal kolukattai. You can use homemade or store bought rice flour in this.
Sweetener
You can use either sugar or jagggery as sweetener in this recipe. Traditionally jaggery is used. But if you want your paal kozhukattai to be white then use sugar. Also sugar is safe to use because jaggery may cause curdling.
Coconut Milk
Traditionally coconut milk is added in this recipe. But I have seen recipes using regular milk as well. But if you are using jaggery for the recipe, it is best to use coconut milk for flavour.
Cardamom powder
One of the main flavouring ingredient in paal kozhukattai is jaggery. A touch of dry ginger powder can be added as well.
How to Shape Paal Kozhukattai
Kozhukattai dough is made using rice flour, salt, ghee and hot water. The dough has to be soft in texture. For Paal kozhukattai the balls has to be shaped small. You can take a teaspoon of dough and shape it into smooth balls.
You can shape it into small balls or you can roll into elongated shape too.
Traditionally paal kozhukattai dough is pressed using a large holed idiyappam maker like thick sev straight into the boiling milk mixture.

How to Make Paal Kozhukattai (3 Easy Steps)
Making Dough (Kozhukattai Maavu)
Take rice flour in a bowl, add salt and ghee. Pour boiling water into the rice flour and Mix wellusing a spoon. once the rice flour and water is combined. Leave aside for 5 mins and then knead using your hands till soft dough forms.
Shaping Paal Kolukattai
Apply ghee on your fingers. Take small portions from it and form into tiny little balls.
Cooking Kozhukattai
Now in a deep pot. Add in milk, water and bring it to a full boil. Keep mixing so the milk doesn't burn in the bottom. Once it starts boiling add the small kolukattai in the milk slowly. Let this cook for 10 mins. Add in sugar. Now pour in coconut milk and cardamom powder and mix well. Mix well and serve.

How to Make Kozhukattai Dough
1)Take rice flour in a bowl
2)Add in salt.
2)Add in ghee
4)Add in boiling water.
5)Stir well to combine.
6)Knead into to a soft dough.
Shaping Kozhukattai
7)Pinch small portion and roll it between your palms.
8)roll gently
9)Smooth balls.
Making Paal Kozhukattai
10)take milk in a pot.
12) Add water.
13)Heat and bring it to a full boil.
14)Now it is boiling.
Mixing kozhukattai in paal mixture
15)Add in the balls in.
16)Boil for 8 to 10 mins. Keep mixing often.
17)Now the milk has reduced and kozhukattai is cooked.
18)Add in sugar.
19)Mix well and let it cook for 4 to 5mins.
20)Add coconut milk
21)Add cardamom powder and turn off the heat.
22)Mix well. Thats it. Done.

How to Make Paal Kozhukattai (with Jaggery)
Paal Kozhukattai (using Jaggery) with Step wise pictures. This version uses jaggery in place of sugar.
Ingredients for Paal Kozhukattai with Jaggery
- Rice flour - 1 cup + 3 tblsp
- Water - 1 ¼ cup + 2.5 cups
- Salt to taste
- Coconut - ¼ cup + ½ cup
- Jaggery - 1 cup
- Thick Coconut Milk - 1 cup
- Cardamom Powder - 1 tsp
- Oil / Ghee - 2 tsp
How to Make Paal Kozhukattai with Jaggery
1)Take 1 ¼ cup water in a sauce pan. Sprinkle salt, oil and mix well. Add rice flour and mix well to a smooth dough. You can check the above recipe for details.
2)Add coconut and knead well.
3)This is your kozhukattai dough.
4)Take small portion and roll it into a smooth ball. Set aside.
5)Now all dough is shaped into small balls.
6)Take 2.5 cups of water in a pan and bring it to a boil. Now Add in the kozhukattai and cook for 10 mins.

8)I cooked jaggery with some water till it is melted. Strain the syrup in a bowl and add into the paal kozhukattai.
9)Add in grated coconut.
10)Cook jaggery with coconut for 10 minutes.
11)Pour in second extract of coconut milk.
12)Mix this well and cook for another 5 minutes.
13)Pour in first extract coconut milk and mix.
14)Add in cardamom powder and mix.
15)Once you add first extract coconut milk, don't heat the mixture.
16)Serve.
This is a spread of different types of kozhukattai which I prepared for last year ganesh chaturthi. On the platter, Paal kozhukattai with jaggery, Sweet Rava Kozhukattai, Chana Sundal, Ammini Kozhukattai and Rava Poorna Kozhukattai.
Tips & Tricks
- When you are using jaggery in this recipe. Never add it directly to milk or coconut milk and boil. Because it may curdle.
- When adding jaggery dissolve in water and make it into a syrup and then add it to the mixture. Also never boil jaggery once you add it in the dish.
- Make the dough with hot water or cook the dough so it stays soft.
- You can serve paal kozhukattai hot or cold.
- Paal kozhukattai dough can be made in advance and stored covered for few hours.
- Always add the shaped balls once the milk or water starts to boil.
- You can use cardamom powder or dry ginger powder.

Ingredients
- 1 cup Rice Flour / Arisi Mavu I used readymade rice flour
- ½ tsp Salt
- 1 tsp Ghee
- 1 cup Boiling Water
- 3 cups Milk
- 1 cup Water
- ¾ cup Sugar
- 1 cup Coconut Milk
- 1 tsp Cardamom Powder
Instructions
Take rice flour in a bowl, add salt and ghee. Pour boiling water into the rice flour and Mix wellusing a spoon. once the rice flour and water is combined. Leave aside for 5 mins and then knead using your hands till soft dough forms.
Apply ghee on your fingers. Take small portions from it and form into tiny little balls.
Now in a deep pot. Add in milk, water and bring it to a full boil. Keep mixing so the milk doesn't burn in the bottom.
Once it starts boiling add the small kolukattai in the milk slowly. The milk should be always boiling when you add the kolukattai else it may disintegrate. So add the balls slowly, don't add it all at once.
Let this cook for 10 mins. Mix inbetween gently. Now add in sugar and stir to combine. Let it cook for another 5 to 8 mins.
Now add in coconut milk and cardamom powder and mix well. Mix well and serve.
Serve this warm or at room temp.
